  1. Place all vegetables in bottom of slow cooker reserving peppers. Top with chicken thighs.
  2. Add dressing, soy sauce and brown sugar with ginger and pineapple juice, reserving pineapple.
  3. Cover and cook on LOW for 7-8 hours or HIGH for 3 1/2-4 hours. During last 30 minutes of cooking, add pineapple and peppers. Serve over hot rice.
