Sweet Twice Baked Sweet Potatoes

"These are sweet - tastes more like dessert than a vegetable. I cut this out of a magazine and put our personal touches to it. I baked on a jelly roll pan but I think you could use a cookie sheet."

  • Heat oven to 375 degrees.
  • Line baking pan or cookie sheet with foil. Spray foil with cooking spray.
  • Cut potatoes in half.
  • Sprinkle with sea salt and place cut side down on prepared pan.
  • Bake 30 minutes or until potato is tender.
  • Holding potato in a cooking mitten, scoop out center in put into bowl, leaving a 1/4 inch thick shell.
  • Add cheese, cream, sugar, cinnamon and pepper.
  • Mash with a potato masher until will blended.
  • Sprinkle inside of shells very lightly with sea salt, if desired.
  • Spoon potato mixture evenly between 4 shells.
  • Bake 8 to 10 minutes or until potatoes are heated throughout.

  4. Great sweet potato recipe! Made to go with baked chicken. Made as is except topped with some pecans. Used skim milk and low fat cream cheese.

Inspired by FT's photo I scaled this back to 1 sweet potatoe but would make the cinnamon just a pinch (I think I put just a dash too much) but the DM and I thoroughly enjoyed it tonight as a side with out dinner and even the DH had a taste and said he wouldn't mind giving it go (just less cinnamon) which coming from him his high praise as he is not a sweet potatoe fan. Thank you happynana for a keeper.

I will not give a 1 or 2 rating as I know that the chefs that took time to enter the recipe felt it was deserving to share.
