  1. Preheat oven to 350º. Grease muffin pans or line with cupcake liners.
  2. Sift together the first 4 ingredients and set aside.
  3. Blend together the oil, egg, vanilla, sugar and salt in a large bowl. Gradually add the flour mixture and stir well. Add rind of your choice, pecans, and dates and stir well. Stir in grated zucchini. The batter will be very thick and stiff.
  4. Spoon into prepared pans.
  5. Bake 25 minutes for mini muffins and 30-35 minutes for regular size muffins. I check mine about 5 minutes before the baking time ends since my oven can be unpredictable.
