Sweetened Coconut Flakes

"My daughter was preparing to made Paula Deen's Jamie's Coconut Cake for my Father's 74th birthday -- coconut cake is his favorite! We only had unsweetened coconut. (We try to use only organic ingredients, and couldn't find any organic sweetened coconut). We tried this, and it turned out wonderfully."

  • In a sauce pan, heat the water and sugar.
  • Add the coconut.
  • Stir until all the water is absorbed.
  • If desired, allow to dry on a cookie sheet.

I, too, am making PD's coconut cake; and, I, too, have discovered there is no such thing as sweetened coconut that doesn't have propylene glycol or some other objectionable ingredient. I was on the same track as you, but had no inclination of the proportions. I just wanted to say thanks for sharing. This will certainly make my life just a bit easier.
     
  2. I tried this with coconut flakes and not shredded coconut and it didn't get absorbed at all. otherwise probably a good recipe
