Directions

  1. Preheat oven to 400 degrees.
  2. Grease shallow baking pan.
  3. Mix onion, parsley and mushrooms. Spread out in bottom of baking pan.
  4. Salt and pepper trout, inside and out.
  5. Lay trout on top of vegetables.
  6. Pour 1/4 cup of butter over trout and cover with baking pan with foil.
  7. Bake for 15 minutes.
  8. Remove from oven and sprinkle bread crumbs, swiss cheese on top.
  9. Pour the other 1/4 cup of butter and dry vermouth over bread crumbs and swiss cheese.
  10. Sprinkle with paprika.
  11. Cover with foil again and place in oven and bake another 10 minutes.
  12. If you would like to brown the crumbs, place under broiler for a few seconds.
