  • Cut cheese in small amounts, dust with flour, set aside.
  • Rub the inside of fondue pot with cut surface of garlic.
  • Leave remaining garlic in pot.
  • Pour in applejuice or wine.
  • Turn to medium heat, until liquid simmers.
  • (Do not boil) Add cheese in small amounts to the hot liquid, stirring until cheese is melted.
  • Add pepper and nutmeg.
  • Continue heating until bubbly.
  • Adjust heat to a gentle simmer.
  • Dip bread cubes in a swirl motion.
  • Helpful Hints: Let bread sit out, or use day old bread, it holds up better when dipping.
  • If cheese gets too thick, add more liquid.

  1. I managed to get my hands on some emmentaler and used it instead of the regular swiss. I followed the rest of the recipe exactly. Wow! It was scrumptious! I had never made a cheese fondue before, but recently vacationed in France and fell in love with it. This recipe came out creamy and smooth. Absolutely wonderful!
     
  2. Swiss cheese doesn't work. It's too sticky and tends to ball. Go for the classic gruyere + emmentaler.
     
  3. YUMMY! EASY! My two favorite in one! I used dry white wine, and added the nutmeg (just a few passes over the microplane). We dipped steamed broccoli, cauliflower, fresh mushrooms, and Portugese breadroll cubes. We used this as "sides" to our NYE dinner (flank steak pinwheels stuffed w/spinach). The kids loved it, too!
     
  4. This recipe was easy to prepare. A couple tips that may help; always us good quality cheeses; when adding cheeses stir in a figure-8 motion to ensure they melt together properly; I added fresh chopped chives at the end. Yummy!
