  • Cover apricots & raisins with water and soak for 30 minutes. Cook rice according to package instructions.
  • Preheat oven to 375 degrees F. In a skillet, melt butter and saute onion, bell pepper and curry. Add almonds & the drained & chopped apricots, raisins and cooked rice. Correct seasonings as desired. Place mixture in a greased baking dish and bake for 30 minutes.

  1. HUGE HIT! It makes a lot; I used a 9x13 pan to bake it. I think a bit more curry powder would be good; the flavor didn't come through well using the amount listed. A beautiful color, too. THE PICKY ONE who doesn't like nuts loved it, almonds & all. Hooray! Made for ZWT9 Family Picks, Mike & the Appliance Killers. **NO I DIDN'T, LOL. I made it for Autumn 2013 NA/ME Tag & A Taste of Syria 9/13!!!
