Szechuan Black-Eyed Pea Salad

ingredients
- 2 (14 ounce) cans black-eyed peas, rinsed and drained
- 1 medium green bell pepper, chopped (1 cup)
- 1⁄2 cup red onion, chopped
- 1 jalapeno pepper, seeded and finely minced (2 Tbsp)
- 1 garlic clove, minced (1 tsp)
- 1 avocado, cubed (1 cup)
- 2 tablespoons lemon juice
- 1⁄4 cup olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon szechuan sauce
- 2 teaspoons sugar
directions
- Toss together black-eyed peas, bell pepper, onion, jalapeno pepper, and garlic in large bowl.
- Toss avocado with lemon juice in a seperate bowl.
- Then add the avocado to the black-eyed pea mixture.
- Whisk together oil, vinegar, Szechuan sauce, and sugar in bowl used for avocado.
- Toss black-eyed pea mixture with Szechuan sauce dressing.

* 7/31/08 edit--This was so MUCH better the next day. Took the left overs to work and it went over really well. It really needs time for the flavors to meld well.**This was quite tasty. I thought the bell peppers came through a little too strong, however. I had to sub habenero peppers for the jalapenos because the current restrictions. This was great on its own, but I also wrapped in a tortilla with pepper jack cheese and grilled on my panini press and it was amazing!

This salad is absolutely fantastic! I give it 10 stars! I didn't have red bell pepper but that's the only deviation from the recipe that I made. The salad didn't miss the red bell, this is so very good! The flavors are awesome and I can't wait to try it again tomorrow when the flavors have melded together even more. Made for Veggie Swap Lucky 13, and I will continue to make this one regularly.

This is really great!! I made this when it came out in Vegetarian Times (October 2007). The sauce that Zaar's computer doesn't recognize is San-J Hot & Spicy szechuan stir-fry and marinade(with a dragon on the bottle) It gave it a good kick, but not too hot, just right. The combination of the szechuan with the avocado and other fresh ingredients was amazing!!! No wonder it won first place for the 2007 reader recipe contest!!!!!!!

Update: We've moved back to the states, and are experiencing the joys of living in Wenatchee, WA for the first time! I'm spending most of my time in the kitchen canning, freezing, and drying fruit now and loving it!
We are a couple, Jason and Mollie, that loves to cook together. We have two wonderful DD's, Enjoli (9) and Emily (7) that make life so much more fun! I, Mollie, studied Nutrition so I try to make most of our meals healthy while still tasting great! Our girls love helping us cook...and eat! We're vegetarian and love eating healthy without missing any flavor! We try to eat mostly vegan, so we have many vegan recipes posted. We are world traveling missionaries and students that have visited many countries and have lived in the States, South Korea, and are currently in the Philippines. So we always need to adjust our menu based on the food available. Zaar has been a tremendous help!
