Taco Bean Soup

"My MIL gave me this one, and it has become a favorite at our house. Easy, low calorie, and the whole family likes it. You can throw in any beans you like (pinto, black, kidney, navy, chili, garbanzo, white, etc.), and this is flexible to additions like a can of tomatoes or green beans, or a package of ranch mix, though I find that makes it too salty for my taste. Makes a great lunch soup, or can become dinner with a salad and some biscuits or rolls."

  • 5 (15 ounce) cans assorted beans
  • 1 (14 3/4 ounce) can corn, drained
  • 1 quart chicken broth or 1 quart vegetable broth, to cover
  • 1 (1 1/4 ounce) package taco seasoning (I use low sodium)

directions

  • add the beans (drained or not, your choice) and corn to a medium sized pot (I use our 5 quart pot).
  • pour chicken or vegetable broth over the top.
  • add taco seasoning.
  • stir and heat through.
  • That's it! :).
