Ingredients Nutrition

  • 34 cup canola oil
  • 14 cup water
  • two 1 oz. packages taco seasoning mix, reduced sodium
  • 1 cup dry roasted peanuts, unsalted
  • 5 cups Corn Chex
  • 5 cups Rice Chex
  • 2 cups corn tortilla chips, lightly salted
  • 1 cup roasted plantain chips

Directions

  1. Preheat oven to 250 degrees F.
  2. Blend oil, water, and taco seasoning mix in large bowl; stir in peanuts until thoroughly coated.
  3. add cereal and tortilla chips; stir until thoroughly coated.
  4. Pour snack mixture into two 13x9" baking pans; bake for 45 minutes, stirring 3 times (every 15 minutes).
  5. Sprinkle plaintain chips over both pans; return to oven for another 15 minutes. Remove from oven, cool and serve.
