Taco Roll Ups

"From Family Fun. I adapted it a bit. Great for lunch boxes. Change the amount of seasoning based on your or your kids' preference. I also have a Chili Powder recipe that could be used in place of the storebought package. UPDATE: We finally tried this. These would be great for lunchboxes. Also great for getting extras, like onions, pepper, etc. in the kids. I had 20 oz. meat, added a little dried minced onion and bell pepper and used just under 1/2 C per roll. It ended up making 9 rolls. All but 1 child liked it (my picky one)."

directions

  • Crumble the ground beef into a large skillet and brown over medium-high heat.
  • When the meat is cooked (about 10 minutes), drain the fat.
  • Add the taco seasoning, water, and corn; stir and simmer the mixture for 3 minutes.
  • Turn off the heat and stir in the refried beans.
  • To give the filling a smooth consistency, pour the beef mixture into a blender or food processor. With 4 or 5 short pulses, eliminate any large chunks from the mix.
  • For each wrap, heat a tortilla in the microwave for 10 seconds.
  • Spread about 1/2 cup of the beef mixture evenly over it, then top with a layer of salsa and cheese. Roll it up and tuck in the ends.
  • Tightly cover each sandwich in plastic wrap and refrigerate for up to 24 hours. Cut in half at serving time. Or cut into 1 inch slices for appetizers.

  1. Easy, tasty dish for a hot summer's evening. I didn't bother to put the meat mixute in the blender so my roll ups came out more like fat burritos. THAT didn't matter to my family, they gobbled them right up. I added two tablespoons of cilantro to the salsa. I also gave everyone a ramekin of salsa on their plate to dip the roll up in as they were eating. Thanks for posting!

  2. I made these for my son for lunches. I used a whole packet of taco seasoning and only a half a can of refried beans. I put 1/4 cup in individual baggies and then my son put the salsa and cheese on it and heated it up. He enjoyed them. Next time I do an OAMC session I will make these and freeze the filling.

  3. My husband and I really like these. I make these for our lunches every month or two. He has to brown bag it to work as he eats on the road and has no microwave to heat things. It gets frustrating trying to come up with healthy meals that can be eaten out of a cooler. I don't blend it, that didn't seem appealing, so left it like it was and always add a can of black beans to it. We don't have trouble with soggy tortillas, I just wrap them in tin foil and throw in cooler.

  4. I am trying to switch things up for my ds8 lunchbox so I made these for him for yesterday's lunch. I also brown bag so I had one as well. My ds8 absolutely loved it which is what really counts but by the time lunch rolled around my tortilla was pretty soggy though the end result was still quite good.

  5. Made for Spring 2008 PAC and loved it. Had as an early dinner and it was quick and easy. We ate them room temp since we could not wait for them to completely chill in the fridge. Will make this summer and as a take along/make ahead meal to go camping in the Dells!!

I am a Christian wife and mother of 3 kids. Since my DH's high cholesterol, we've been eating better. I never used to like cooking. Since eating better, I've liked learning and preparing new recipes. My kids haven't reconciled themselves to the new eating yet. I grind my own grain and make all my own breads.?Working 2 hours a day in the local high school lunch room.??I am homeschooling my high schooler.? ?Also found out 1 child has multiple food allergies (wheat, dairy, tomato, chocolate, etc) and another is gluten sensitive. So, we just started (July 09) eating gluten and dairy free. I've been busy with getting our house market ready, even though it's not the best time for that.?
