Taco Salad Made Easy

"I first heard of this concoction at the community pool. Great for the kids and no mess. This was actually made right in the bag of Doritoes. Called "Taco in a bag" Warning--eyes are bigger than the stomach. Ingredient amounts can be altered to the individuals tastes."

  • 12 ounces nacho cheese flavor Doritos
  • 1 (11 ounce) can refried beans
  • 3 -4 cups lettuce (shredded)
  • 1 tomatoes (chopped)
  • 6 ounces cheddar cheese (shredded)
  • 12 cup salsa

directions

  • Slightly crush Doritoes on individual plates.
  • Thin beans with a little water and warm.
  • Spread beans onto Doritoes.
  • Layer the remaining ingredients.
  • Acocado is also good and black olices or whatever can be added.
  • Ground beef with taco seasoning can be added for the man who requires all meals have meat!

Thank you to my good friend for this premium membership as a wonderful birthday gift. I grew up a military brat and managed to eat many various foods, but being very young then, I now am experiencing those foods at an age that I can appreciate them. Being a nurse, I have a busy work schedule and like to find recipes that produce great tastes to share with friends but don't take alot of time. With a warm, humid climate in NC, I look for lite foods or things to grill. One can only eat sooo many salads though. Texture is VERY important. I have learned to eat meat med-rare, but nothing "gooshy or slimy"! Some day I will master homemade biscuits and moms meatloaf. I already have the enchilada sauce down pat and am finding many more here.
