Taco Soup

"This is soooo quick and easy to make! It's absolutely delicious to eat as is or with chips, cheese and sour cream. My mother-in-love made it for us just after we brought home our first baby. So, I've got two reasons to love it: it's a great soup, and it reminds me of 2 wonderful people...my mother-in-law and my beautiful child."

  • Brown ground beef with onion in 6 qt.
  • stock pot.
  • Add Rotel, tomatoes, ranch mix, taco mix, ranch style beans and cream corn to beef and onion.
  • Drain and add remaining cans of beans.
  • Add 2 cans of water.
  • Stir together and simmer for 10 minutes.
  • Serve over crushed tortilla chips.
  • Garnish with grated cheese and a dallop of sour cream.

I'm a SAHM with 2 precious children. Over the years, my husband has become the head chef in our home. He absolutely LOVES to cook. He doesn't mind cleaning up the mess he makes in there, either.
