Taco Soup (Paula Deen)

  • Brown the ground beef and onions in a large skillet; drain off excess fat and transfer browned beef and onions to a large slow cooker or stockpot.
  • Add the beans, corn, tomatoes (I like to mash all of the tomato products before I put them in the stockpot--sometimes there are very large chunks of tomatoes, especially in the stewed tomatoes), green chilies, black olives, green olives, taco seasoning and ranch dressing mix.
  • Simmer over low heat for about 1 hour (or 6-8 hours on low setting in crock pot).
  • To serve, place a few corn chips in each bowl and ladle soup over them.
  • Top with sour cream, cheese, green onions and jalapeños.

  2. This is very good. I did have to add an extra 1/2 packet of taco seasoning to make it more "taco flavored" and make a few adjustments for things I can't get easily in England. So instead of tomatoes with chilies and canned chilies, I ended up adding about 2/5 of a jar of sliced jalapenos (I chopped these finely). I made a substitute for the ranch dressing mix and it's not as good as the real deal, but it worked and I think the olives add a nice touch.
     
  3. Was definitely better than we thought it would be. My hubby said he'd even consider serving to company. I made a smaller batch and basically halved this. Kicked up the flavor a little with cummin and chili powder, still not too hot for my small children though. Fresh cilantro is excellent in this (or any mexican dish for that matter). The corn chips (fritos really perfect) are a definite must for garnish.
     
  4. Not only is this soup really easy, it is one of the best pantry meals I have ever made! The only real effort involved is in opening all of the cans. ;) I have made it in the crockpot and on the stove. Leftovers freeze easily.
     
  5. I made this recipe for our soup club at work and it was a hit! I modified the recipe, taking out the cans of chilies and doubling the cans of tomatoes with chilies, just to cut down on the spiciness of the soup. Serving it with sour cream also helped to cut down the heat. It was VERY thick, and almost like a stew so I added a lot of chicken broth to stretch it. It was SUPER easy to make, literally a 2 dish meal. I'll be making this again on a cold winter's night!

  3. This has become my favorite soup! I think it's actually even better when I used pulled pork instead of hamburger. But either way, it's scrumptious!!!
     
  4. This is a simple recipe that you can easily adjust to your own taste. I wanted less chili and more soup so added 2 cans of beef broth. My husband and kids are not big on beans so I only used one can of kidney beans and one can of black beans. I blended the beans and tomatoes together in a food processor to camouflage their existence and my family had no idea they were in the soup! I also used ground turkey instead of beef and mixed the taco seasoning (2 packets instead of one) into the browned meet before adding the other ingredients. We are not big olive people so I chopped the olives and only used half a can. It turned out yummy! I will definitely make this again.

I live in the San Francisco area and love it here. I discovered Recipezaar (then Food.com..Genius Kitchen) in 2001 and have been so happy to have my favorite recipes stored safely here. I am mother to 7 and grandmother to 7. I love to knit, smock, sew, etc., but my favorite hobby of the moment is traditional rug hooking. This is a sample of what I do.? It's called "November".? I dyed most of the wool myself. It is made from wool flannel, cut into strips a little less than 1/4" and then worked into a linen backing. This is my 3rd rug.
