Taco Style Lentils & Rice

"I originally saw this on Hillbilly Housewife. It's all dry ingredients so you could mix up a large batch and store in a jar (in the fridge if you are using brown rice, or in the cabinet if you are using white rice). Then just scoop out a cup and a half of mix to make the recipe."

  • In a large saucepan, bring water to a boil and add all dry ingredients. Return to boil. Reduce heat, cover, and simmer for 50 minutes. Water should be absorbed and lentils tender. Serve alone as a slop or use as taco filling.
  • Alternately, dump everything in a crockpot and cook on low for 6 to 8 hours.
