Taco Taters

"My mom used to make this when we were kids. It's a great way to use up left over taco toppings and meat. Very filling and quite tasty too."

 1. Mmmm-good! *PARTY 2009* I used leftover over taco meat, so this was super easy.

 2. Made for Potluck Tag. Like on of the other reviewers said, this is a great idea and we really enjoyed this and it was very filling and a quick and easy meal. I baked my potatoes in the MW instead of in the oven. Will definitely make this again. Thanks for posting this!

 3. This is a great idea in place of having the normal taco. More filling too:-) Glad you have it posted Spice. Thanks!~ Made for PRMR.~

 4. I cut this recipe in half for just the 2 of us, & these were a nice change of pace from our usual potato dish! I always enjoy a recipe that includes an unpeeled potato! [Tagged, made & reviewed for one of my adoptees in the current Pick-A-Chef]

I am a mother of 3 in SW Missouri. I am an Independent Consultant for Brown Bag Party, an in home romance party plan company. In my spare time I love to cook. I have since I was a kid. My favorite cookbook would have to be anything by Gooseberry Patch. I love their recipes their so homey, yet presentable, the perfect combination for a Midwestern mom. I really hope that I get to meet new people who share the same love for cooking as I do.
