Tagen (Ramadan recipe for Iftar)

50 gms. grilled fish with a citrus mix
ingredients
- 50 g grilled hamour fish
- 50 g tahini paste
- 40 g onions
- 5 g garlic
- 20 ml lemon juice
- 10 ml orange juice
- 2 g salt
- 1 g cumin seed
- 1 g white pepper
- 20 g oil
- 2 g pine nuts
- 100 ml cold water
- 20 ml olive oil
directions
- Mix the tahina paste with cold water in a bowl.
- Add salt, cumin seeds, lemon juice, orange juice, pepper and salt.
- Mix well and keep aside.
- Heat oil in a skillet.
- Add garlic and 20gms of onion.
- Stir-fry until brown.
- Add the tahina mix and keep boiling on low flame until well cooked.
- Allow to cool.
- When it cools, arrange the grilled fish on the mix and top it with fried onions and pine nuts.
- Serve hot.
