  • Mix 1st 3 ingredients. Pour into 8x8 pan. Bake at 400 for 20 minutes. Cool & crumble.
  • In a bowl, mix crumbs, 1/2 cup enchilada sauce and remaining ingredients.
  • Roll into balls and bake at 350 for 20 minutes.
  • Serve topped with remaining enchilda sauce.

  1. I made these to use up some ground turkey and Jiffy mix and they were outstanding. We just ate them without the 2nd can of enchilada sauce and yummy to our tummy!!! Will make this one again!

  3. I made these with jalapeno corn bread and Enchilada Sauce Recipe #42094 and it turned out great! I loved how light the meatballs were.
     
  4. I made a batch without additional sauce on top and my daughter scarfed those right down! Good stuff as is too.
     
  5. My family ate this, but asked that I don't make it again. I didn't care for it's texture, and it took a lot of time compared to other meatballs.

<p style=text-align: left;>I am a working mom of 3. I work 1 full-time job, and one part-time job. So I do a lot of Once-a-Month &amp; Freezer Cooking. Unfortunately DH doesn't like many veggies, so I mix (hide) them into recipes. <br /><br />My youngest has developed some severe food allergies (milk &amp; eggs), so my cooking has definitely adapted. This means you'll see a variety of recipes &amp; even some that have both their original &amp; their adaptations.</p> <p style=text-align: left;>I'd love to have more time to make desserts, but I just really suffer from lack of energy to make them. Plus, I really don't need to add those calories to my diet (but they're SO good!). <br /><br /></p>
