Tandoori Chicken Burgers With Minty Cucumbers

ingredients
- 1⁄4 cup dry breadcrumbs
- 2 teaspoons curry powder
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon cayenne pepper
- 1 lb ground chicken
- 2 tablespoons plain yogurt
- 4 mixed-grain hamburger buns

Minty cucumbers
- 1 cucumber, thinly sliced
- 1⁄2 cup red onion, thinly sliced
- 1⁄4 cup of fresh mint, chopped
- 1 tablespoon balsamic vinaigrette
- 1⁄4 teaspoon salt
directions
- In a large bowl combine bread crumbs, curry powder, salt and cayenne.
- Add ground chicken and yogurt; mix well. Shape into 4 patties.
- Grill for 14-18 minutes or until patties are no longer pink. Serve on toasted buns with minty cucumbers.
- Minty cucumbers: In a medium bowl combine all of the salad ingredients. Toss well.

These were quite good; moist burgers with a hint of curry. (I'm a big curry fan so I might add even more next time.) I was a bit worried as I had to make my own ground chicken in the food processor, but that was no problem, everything stuck together perfectly. The cucumbers were also very nice. We had this with some spicy oven fries and raita, which made a great combination (the raita's delicious on top of the burger as well). Thanks!

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*.
