Tangy Apple and Almond Salad

"I was recently at a farmers' market where I ate some salads made from the produce on sale. One of them was an outstanding apple salad - which I've recreated with this recipe. It is absolutely critical to use excellent quality apples for this one! I like to use pink lady apples bought from the farmer (instead of the supermarket)."

  • Chop almonds
  • Roast almonds gently in a heavy bottom fry pan on medium heat until golden brown.
  • Thinly slice the apples.
  • Sprinkle with lemon juice as the apple slices are added to the bowl and stir gently.
  • Chop parsley very finely and add to apples.
  • Drizzle vinegar and olive oil over the top and stir again.
  • Finish by sprinkling almonds and breadcrumbs on top.
  • Stir before serving.
