  • Put diced potatoes in saucepan, cover with water and add 1 tablesppon salt.
  • Boil potatoes until tender and drain.
  • Add butter, cream cheese, remaining salt and pepper. mash together.
  • Stir in buttermilk.
  • Enjoy! :).

  1. Quick easy & tasty dish. I like to measure my potatoes based on weight so I tried 1 1/2 lb (6 serv) which was just enough for 6 servings. However, I found there was way too much buttermilk called for so I cut that back to 1 cup. If you don't have buttermilk, you could use yogurt/milk combination.
     
  2. EXTREMELY NICE TASTING, especially with the cream cheese & buttermilk combo! As is usual when I prepare mashed potatoes from scratch, I didn't peel them before dicing, & I did steam them, but other than that . . . Definitely a keeper recipe! Many thanks!
