Tapioca Pudding

"This is a time consuming recipe but absolutely my favorite. I have had it written on a page that is really beginning to fade. I am sure I have had it for about 20 years or more. I don't make this often, because I am the only one that eats it....wait a minute...maybe I should make it more often...silly me ..Cooking time does not include soaking time."

  • Soak tapioca in 1 cup of the milk overnight in fridge.
  • Add remaining milk and cook, stirring occasionally, in top of double boiler about 3 hours over medium low heat. Take off of heat.
  • Beat egg yolks, sugar and vanilla together and add to tapioca and blend.
  • Beat egg whites until stiff.
  • Line a greased baking dish 9 x 9 with a layer of tapioca, egg white and repeat layer of tapioca and egg white.
  • Bake in preheated oven of 325F for 15 minutes.
