Taste of Summer Wraps

"I combined a few recipes that I really like...BLT's, ranch dressing and wraps. I'm sure you could add all kinds of stuff to make this your own. Bite into this, and you'll be transported to summertime...warm breezes...cool lemonade...birds singing in the trees...ENJOY!"

  • Fry bacon til crisp.
  • Set aside.
  • Mix together cream cheese, sour cream and ranch dip mix.
  • Spread lightly over tortillas.
  • (I use about 2T per tortilla).
  • Lay spinach leaves over it.
  • Place ham slices on as if you were making a burrito.
  • Top with tomato and 1-2 pieces of bacon.
  • Roll together like a burrito with both ends closed.
  • Cut diagonally.
  • Serve immediately.

I love cooking for those around me! I have 2 boys (ages 11 and 16) who usually like to try out my experiments! (As long as the 11 year old doesn't think onions are part of the mix!) I've been cooking since I was 10. My parents are dairy farmers, so my choice of after-school activities were 1. Cook supper or 2. Work in the barn. Option 2 involved a lot of nasty smells, so I quickly made it worth their time to leave me at the house!! I am a Registered Nurse and a Lactation Consultant in northern Indiana. My job involves helping women and babies with problems or questions related to breastfeeding. It's a great job. Most of my time is spent encouraging new mothers as they adjust to motherhood and it's demands. We have 3 "New Mother's Groups" which each meet 1x/week. I use this chance to try out fun or interesting recipes. The mothers really appreciate someone spoiling them for a change! I enjoy reading, quilting and watching my boys' activities.
