  • 16 ounces extra lean ground beef
  • 1 cup grated carrot
  • 1 cup grated onion
  • 4 tablespoons salsa
  • 2 teaspoons artificial sweetener
  • 14 teaspoon salt substitute or 1/4 teaspoon salt
  • 3 unsalted soda crackers, crushed

  • Preheat oven to 350F.
  • Combine ground beef, carrot, onion, salsa, artificial sweetener, and salt substitute. Spread in a nonstick loaf pan. Sprinkle soda cracker crumbs on top. Bake uncovered for two hours.
