- 8 ounces linguine
- 3⁄4 cup extra virgin olive oil
- 1 1⁄2 lbs large shrimp, peeled and deveined (20-25 pieces)
- 1 bunch asparagus, chopped into 1/2 inch pieces
- all-purpose seasoning, to taste
- 2 garlic cloves, minced in press
- 2 teaspoons finely chopped fresh cilantro
- 1 teaspoon dried thyme
- 1 teaspoon lemon zest, which is the grated peel
- 2 tablespoons lemon juice
- 2 tablespoons grated parmesan cheese
directions
- Bring water to boil in large pot & cook linguini according to package directions. Drain pasta & set aside in same pot.
- Meanwhile, heat oil in medium saucepan over low heat until warm. Season shrimp with your favorite all-purpose or seafood seasoning. Add shrimp, chopped asparagus, garlic, thyme and cilantro, stirring to coat shrimp in oil. Cook, stirring occasionally, until garlic begins to brown and shrimp becomes opaque pink, 8-10 minutes.
- Remove pot from heat. Stir in lemon juice and zest.
- Move pot with reserved linguini to low heat. Add shrimp & asparagus combo, stirring until all ingredients are well mixed.
- Remove pot from heat & stir in parmasaen cheese. Serve while warm.
