  • Mix together all the ingredients.
  • Roll into SMALL balls (they are very rich) and then roll the balls in the extra wheat germ.

  1. This is such a versatile recipe and I love that it is full of good ingredients and can be made even more healthful if you want. I use a lot of ground flax seeds in my recipes and substituted 1/4 cup of ground flax for half of the flour. Used non-hydrogenated natural peanut butter, and ground hazelnuts instead of the sunflower seeds because that's what I had on hand. I bought a bag of ground hazelnuts at Trader Joe's a while ago and have been wondering what I was going to do with them. Using walnuts would increase the omega 3's considerably. If you used walnuts AND flax seeds you would have incredibly healthy little omega 3 balls. I rolled some in ground hazelnuts, some in ground flax, and some in wheat germ. All are good and it's just a matter of preference which one you like best. Ground peanuts would also be good since they contain peanut butter. I would like these just a tad sweeter so will adjust accordingly next time. You could make wonderful rum balls with this recipe and get a good dose of healthy stuff along with your booze! Great recipe that will be fun to experiment with. I wonder if you omitted the flour altogether and substituted ground walnuts or flax seeds you could fit a couple of these into South Beach? Wishful thinking?As is I give them 4 stars but with changes to suit our taste more they will be 5 stars. I'm glad I found this recipe.
     
  2. We liked these, and I don't feel bad letting the kids have more than one because they are healthy! We used agave nectar instead of maple syrup and rolled them in wheat germ and unsweetened finely grated coconut. Thank you for sharing, we will make this again and again.
     
  3. On taste alone, these were probably only a 4 but due to the ease of changing the serving size, I added an additional star. I only wanted a small snack, so I used 1 TBLS of each item. This was so rich, just that small amount fixed my chocolate craving. I also subbed quick oats for the flour and flax seed for the sunflower seed. I will fix this often when the ugly chocolate craving monster rears its ugly head! Thanks for posting!
     
  4. Reviews were all over the map with these tasty treats. For the sweet tooth people, maybe not sweet enough, but that didn't stop them from going back for more! Everyone else thought they were wonderful, not too sweet but that's what was nice about it. I personally enjoyed the cocoa. I used a smooth peanut butter (not natural...) and whole wheat flour. Easy easy! tasty healthy treats, thanks.

Tweaks

  1. Instead of regular peanut butter, I used cranberry coconut peanut butter (yum butter brand) and rolled these in a small amount of powdered sugar. I also substituted ground flax seed for the wheat germ, since that is what I had, and added a tablespoon of vanilla-flavored hemp protein powder for added nutrition. These were so good, I had to box them up for the neighbors to prevent myself from eating them all. You will feel like you earned these if eaten after sledding or snow shoveling, with some nice hot chocolate or coffee!
     
  2. I feel that the balance in this recipe isn't quite right. I could tell halfway through combining ingredients that with a 1/2 cup of honey and/or syrup and pb that there are not enough liquid ingredients to account for all of the dry. As a result, I has to use 1/4 cup cocoa and 1/4 cup of sunflower seeds and the wheat germ didn't stick so well on the outside. I used a TBSP of flax seed in place of some of the wheat germ. Very delicious. The syrup (mine on the thin side), honey (mine was VERY thick), and pb consistencies will play a big role in how this works though so pay attention as you're mixing. I also find the calorie and fat info on this recipe hard to believe from reading my ingredient labels. Careful with thinking it's really healthy being so high calorie!

  5. Wow, are these ever good! I followed the lead of another reviewer and substituted ground flax seed for the wheat germ since I already had it in the fridge. The only other changes I made were to chop up sunflower seeds and roll my finished balls in a mix of cocoa powder and ground flax seed. It melted into the "truffle" within a half hour, but they still taste WONDERFUL! I got about 3-1/2 dozen truffles out of this recipe, which I will make again regularly. Imagine - satisfying my chocolate craving with something that actually has some nutrition! Thank you!
