Tasty Taco Joes

"A sloppy joe recipe with a Mexican kick--kind of like tacos and sloppy joes in one! Easy and quick! Great with mexican rice, refried beans, corn or a salad. (I think this recipe came from a recipe book I received free in the mail, but I can't remember what it advertised.)"

 1. Very easy to do. But the taste was missing something. So the next day I added mustard on mine. Thanks Andrea :) Made for Healthy tag game

 2. For something so quick and easy, these sloppy joes were yummy! For the salsa, I used LaVictoria Salsa Suprema. I wasn't paying attention and realized later that I only used a 8-ounce can of tomato sauce, but even after simmering for 15 minutes the sauce was still very "sloppy". Served on toasted whole wheat hamburger buns. Loved the cheddar on top.

I currently live in West Virginia. I have two daughters, 10 and 7 yrs. I teach 4th grade at the small elementary school that they attend.

Shortly before the birth of my youngest daughter, I started becoming interested in cooking, with great thanks to this site. I love trying new things. I used to collect cookbooks, and I still have quite a few, but since I've been a member of food.com, I have to admit that I don't use them much anymore. This is so much easier!

In addition to cooking, I enjoy spending time with my girls, reading, and shopping. I'm also a big Virginia Tech fan, hence my user name. It's where I went to school, so my loyalty lives on!
