  • 2 12 cups frozen tater tots
  • 1 cup chopped cooked ham
  • 14 cup chopped onion
  • 14 cup chopped green pepper
  • 2 tablespoons vegetable oil
  • 4 eggs, beaten
  • salt and pepper

Directions

  1. In a large skillet, cook potatoes, ham, onion, and green pepper in oil over medium heat for 8-10 minutes or until browned, stirring constantly while breaking up the Tater Tots.
  2. Add eggs.
  3. Cook and stir until eggs are completely set.
  4. Season with salt and pepper.
