  • Mix together the marinade ingredients and add the lamb cubes. Toss well and then skewer meat onto 4 metal skewers (broiler) or 4 wet wooden skewers (open fire).
  • Arrange the sliced feta on a large serving dish and sprinkle over the herbs, lemon zest and sliced onion. Drizzle over the lemon juice and olive oil and season with salt and pepper.
  • Cook the lamb skewers under a preheated hot broiler for about 6-8 minutes, turning frequently, until browned and almost cooked through. Do the same for an open fire. Remove from heat and leave to rest for 1-2 minutes.
  • Serve the lamb with the salad along with plenty of crusty bread, if desired.
