Tempeh Reuben Sandwich

- 8 ounces tempeh
- 3⁄8 cup nutritional yeast flakes
- 1⁄8 cup whole wheat pastry flour
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon garlic powder
- 1⁄4 cup water
- 1⁄3 cup soybean oil
- 1⁄8 teaspoon horseradish
- 1⁄4 tablespoon prepared mustard
- 3⁄8 cup sauerkraut
directions
- Mix dry ingredients in a saucepan.
- Add water slowly, whisking to avoid lumps.
- Heat gently over a low to medium flame, whisking constantly until thick and creamy.
- Remove from heat and whisk in oil, horseradish and mustard.
- To make the sandwich, spread one slice of dark bread with your favorite mayo, then layer with ¼ cake of crisply fried tempeh, 3 tablespoons warm sauerkraut, and ¼ cup of the sauce prepared above.
- Top with another slice of dark bread and enjoy!
