ingredients
- 1⁄2 cup fresh lime juice
- 1⁄2 cup chopped fresh cilantro
- 1⁄2 cup olive oil
- 1⁄3 cup soy sauce
- 1⁄4 cup tequila
- 7 cloves garlic, minced
- 2 teaspoons grated lime zest
- 2 teaspoons ground cumin
- 2 teaspoons ground oregano
- 1 teaspoon ground black pepper
directions
- Combine ingredients and marinate meat for 2-4 hours.
- (If a flank steak, do even longer- up to overnight).

very tasty! since this makes a lot of marinade and i am cooking for two, i froze part of the marinade to be used at a later date. the only change i made was to add some chipotle hot sauce. even so, the marinade was not as potent as you might guess from the ingredients. it has a nice balanced flavor. i tried it on a small chuck roast and on chicken legs. since i do my prep cooking on the weekend, i let them marinate for several days. the roast came out nice and tender, but i liked this better on the chicken, as i think chicken's basic mild flavor picks up the seasonings better. next time i might add more chipotle. yum!
