Marinade Ingredients
- 1⁄3 cup lemon juice
- 1⁄4 cup butter, melted
- 1⁄4 cup soy sauce
- 2 tablespoons brown sugar, firmly packed
- 1⁄2 teaspoon ground ginger
- 1⁄4 teaspoon pepper
- 3 tablespoons ketchup
- 1 teaspoon garlic, finely chopped

Chicken Ingredients
- 1 lb boneless skinless chicken breast, cut into about 32 (1-inch)

Kabobs Ingredients
- 8 pineapple chunks (1-inch)
- 8 cherry tomatoes
- 1 green bell pepper, cut into 8 (1-inch)
- 1 zucchini, cut into 8 (1-inch)
directions
- Combine all marinade ingredients in large resealable plastic food bag. Reserve 2 tablespoons marinade; set aside. Add chicken pieces. Tightly seal bag. Turn bag several times to coat chicken well. Place in 13x9-inch pan. Refrigerate, turning occasionally, at least 3 hours or overnight.
- Heat 1 side of gas grill on medium or charcoal grill until coals are ash white. Remove chicken from marinade with slotted spoon; discard marinade.
- To assemble kabobs, alternately thread chicken, pineapple, tomatoes, green pepper and zucchini onto skewers.
- Place kabobs onto grill. Grill, turning and brushing occasionally with reserved marinade, until chicken reaches at least 170°F or until juices run clear when pierced with fork (15 to 20 minutes).

I agree with others that this makes for a delicious dinner! The weather didn't cooperate with grilling tonight, but these did just fine under the broiler. I must have had large veggies, as my skewers were very crowded! My only regret is that I had to use canned pineapple, which definitely lost a little something.I used oil like other reviewers, though I will try butter next time because I think the flavor would be delightful. I also forgot to use the reserved marinade (doh!) but the flavor did not suffer for it. Thanks for posting, I'm sure I'll revisit this one again this summer before grilling weather is through :). Made for PRMR.

This one is a definite keeper!

I COULD NOT GET ENOUGH OF THIS!! What a delicious dinner! I did use oil instead of butter after reading other comments. Skewered it with red onion, red peppers, zucchini, mushrooms, and pineapple chunks. I also reserved the marinade and boiled it down to make a sauce and served everything over rice. This one is a definite keeper!

I subscribe to several cooking magazines, that usually, require everyday on-hand ingredients. <br /><br />I am not very fond of most seafood, but do enjoy lobster, grilled shrimp and chilean sea bass. I won't cook anything with rosemary or curry, as I really don't like either herbs' flavor. And now from trying recipes, I found that I don't like dijon mustard, but love vinegar and mustard, not sure why I don't like the taste of dijon mustard.</p>
