Teriyaki Pork Tenderloin (Simple!)

- In a large ziploc bag, combine soy sauce, sugar and ketchup. Add tenderloin. Seal bag and turn to coat. Marinate at least over night, preferrably longer though.
- Preheat oven to 425 (I used the grill instead).
- Place pork in 13 x 9 greased baking dish. (I put the remaining marinade in a saucepan, brought to a boil and added some cornstarch to thicken it.) I served the sauce on top of the pork.
- Bake, uncovered, at 425 for 35-40 minutes OR until meat thermometer reads 160. Let rest for 5 minutes before slicing.

I found this recipe today in my TOH book, as you mentioned in the intro, and wish I had read your notes and the reviews before making. While I really liked the taste of this, I think it would be even better grilled. My only complaint really was that the marinade (which was still on the meat) burned to the bottom of my Pampered Chef stoneware pan. Not much sticks to this pan, but I had one heck of a time cleaning it off after. If planning to bake this in the oven, I would suggest lining the pan with foil. Other than that, a nice recipe with good flavour. I also liked your idea of boiling the marinade and then thickening rather than discarding it. I'll be sure to do it that way next time. I am a mom to 2 boys, ages 11 and 6. My youngest is a cancer survivor, so we enjoy each day given to us! You never know what can happen in your life! I have been in the loan business for over 10 years and I love it. Unfortunately, this economy has put a wrench into my awesome career. After a couple layoffs, I decided I need to do something else for awhile. I am now selling advertising, and it's different! I am thankful to have a job, so can't complain much! I love to cook. I can spend a whole Sunday in the kitchen just cooking away. I love trying new recipes (my boyfriend hates it. Lol. He likes what he likes and would be fine never trying anything new.) I never bake. I think it's because I don't measure. I am a throw-in-the-ingredients until they taste good kind of girl. I LOVE this site(actually, I am addicted to it) and am enjoying finding new things to make everyday!
