Teriyaki Potatoes

"A twist on the typical potato side dish - made even easier by cooking in the microwave. This was a $100 prize-winner in a Better Homes & Gardens contest (not me)."

  • Wash and scrub potatoes, then cut into quarters and place into a microwave safe 1 1/2 quart casserole.
  • Add all remaining ingredients except rosemary, tossing to combine.
  • Cover and cook on HIGH power for 12-16 minutes (time will vary based on the wattage of your microwave) or until potatoes are tender, stirring a few times during cooking.
  • If your microwave does not have a rotating base, every time you stir, you should also give the casserole a 1/4 turn so it cooks evenly.
  • Stir again before serving and add rosemary and serve with sour cream on the side, if desired.

  1. Quick, easy and delicious. We make this frquently during the summer to go with our grilled dinners. We do omit the cayenne pepper and use a teriyaki marinade instead of a sauce.
     
  2. Oh yum - these were good and soooo easy. I don't normally use my microwave for cooking - just thawing, or heating up my coffee, but this recipe doesn't taste "waved" at all! The only change I made was to add a little chopped onion. I actually micro-ed these ahead of time and just popped them into a warm oven before serving. Anything "do-ahead" is a plus before a dinner party! Served these with baby back ribs, but they are simple enough for a weeknight side dish, too. Thanks, Heather!
     
  3. I tried Teriyaki Potatoes at a restaurant the other day. Never heard of them before. We liked them so much that I came home and searched for a recipe. I was hesitant about the microwave, but it came out just the same as the restaurant's! I thought for sure they had to go into the oven. Tip: drizzle with an additional tablespoon or so of teriyaki when done(I used the marinade w/ pineapple). I agree these would be a nice variation for a cookout....something different

I forgot the cayenne, but it wasn't necessary. I also used garlic powder instead of garlic salt. The potatoes were very flavorful with just a hint of sweetness. Thanks for posting!   5. These were amazingly good! They have a wonderful smokey, slightly sweet flavor! I made them as written except I used fresh thyme instead of rosemary. I didn't have any Teriyaki sauce, so I used 1 part brown sugar to 1 part soy sauce.This worked perfectly! I love the way the sauce caramelized on the potatoes while cooking! I'll be making this alot! I added my photo:)
