ingredients
- 1⁄2 cup Splenda granular
- 2 tablespoons egg whites
- 1⁄4 teaspoon vanilla extract
- 1⁄2 cup adzuki beans
- 1⁄2 cup unsweetened vanilla Almond Breeze
- 6 ounces Mori-Nu extra firm lite tofu
- 1 tablespoon baking powder
- 1 cup whole wheat flour
- 2 tablespoons unsweetened dried shredded coconut
directions
- put tofu and almond milk in blender or food processor.
- add vanilla, beans and egg white, blend till incoporated.
- pour in large mixing bowl.
- sift dry (minus coconut) into wet and fold till incorporated.
- spoon into muffin tin, greased.
- sprinkle with coconut.
- bake at 400 for 20 minutes.
