  • put tofu and almond milk in blender or food processor.
  • add vanilla, beans and egg white, blend till incoporated.
  • pour in large mixing bowl.
  • sift dry (minus coconut) into wet and fold till incorporated.
  • spoon into muffin tin, greased.
  • sprinkle with coconut.
  • bake at 400 for 20 minutes.
