  • Pour boiling water over bulghur.
  • Let stand 30 minutes.
  • Squeeze out excess water until bulghur is just moist.
  • Add all remaining ingredients.
  • Mix well.
  • Refrigerate 2 hours.
  • Serve with torn strips of pita bread or with taco chips.
