“Got this from an old co-worker. Makes a good main dish served with or on fresh cornbread. Leave out or reduce the amount of chillies if you don't like spicy food. I've posted the vegetarian version, but you can make this with cooked ground beef or bacon added in along with the tomatoes, onion, chilies, etc.”

Directions

  1. Cook beans in pan until tender/thoroughly heated, then drain.
  2. Return beans to pan.
  3. Add tomatoes, onion, bell pepper, okra or green beans, and chillies to beans and stew until onion is tender.
  4. Add cumin, red pepper flakes and salt & pepper.
  5. Mix thoroughly.
  6. Place in casserole dish at 350F for 25 minutes.
  7. Remove from oven and top with cheese.
  8. Serve.
