Texas Two-Step Chicken

"Place 4 boneless chicken breast halves in a 2 1/2 quart shallow baking dish. Mix 1 1/2 cups of Picante sauce, 3 tbsp. brown sugar, 1 tbsp. Dijon mustard and pour over the chicken. Bake at 400 degrees for 20 min. or until done. Serve with rice."

  1. I made the recipe with 3 chicken breasts instead of 4 (b/c that's all my store had). I did not cut down on the sauce any, however. I baked the chicken exactly as prescribed in the recipe, but after 30 mins my chicken was still raw (which is odd b/c our stove is new). I stuck them back in for another 20 mins or so and they were finally cooked. This was a tasty recipe- but the picante sauce seemed to overwhelm the recipe just a bit. I added another tsp or so of Dijon to what was called for, and next time I think I'll add a bit more brown sugar as well. Overall, however, this is a good recipe and I'm sure we'll make it again.
