  1. Heat butter and oil in a large kettle and sauté chopped onion, jalpeno, garlic, carrots, celery and chicken; simmer 5 minutes. Combine with cumin, chili powder, salt, lemon pepper, hot pepper sauce and flour.
  2. Add tomatoes and chicken stock and simmer 1 hour.
  3. Optional - top with tortilla chips, sour cream, diced avocado and/or grated cheddar cheese.
