Thai Chicken Cakes With Sweet Chilli Sauce

"This is a delicious recipe, different from the normal stir fry, salad or curry. Quick as lightning to make too. I use just cooking spray or bake them."

ingredients

  • 2 chicken breasts, cubed
  • 1 garlic clove, roughly chopped
  • 1 cm finely chopped fresh gingerroot, knob, roughly chopped
  • 1 small onion, chopped
  • 2 tablespoons coriander, chopped
  • 1 green chili, chopped
  • 1 pinch salt & freshly ground black pepper
  • 2 tablespoons olive oil
  • sweet chili paste (for dipping)

directions

  • Place the chicken, garlic, ginger, onion and coriander in a food processor with the chilli and season to taste. Blitz for 15-20 seconds.
  • Shape the chicken mixture into small cakes
  • Heat the olive oil in a frying pan over a moderate heat and fry the chicken cakes until golden.
  • Serve immediately, with sweet chilli sauce and sliced spring onion.

  1. By coriander do you mean fresh cilantro? 2 T. Of Coriander seeds would be a little much.

  1. I thought these had a very nice flavor and texture. I did use ground turkey ( 93 % ) so I bet that helped with the moisture. They do need a sauce - I used hoisin sauce since it was what i had on hand. I froze these after cooking and have been using in pita's and on salad for lunches. Nice recipe. Thanks
     
  2. These were kind of plain - I'd expected a lot more flavor.
     
  3. I really liked these, and so did my children. I did add a splash of soy sauce to the mix and adjusted the amount of spice and garlic for us. I served them with Recipe #409412 and some fresh veggies. My only problem was that they were a little dry, but I'm sure that can be fixed, maybe I'll try them with chicken thighs instead.   4. This recipe is missing the key ingredient that you absolutely can not be without, Kaffir Lime Leaf. This recipe looks like it could work if you add the lime leaf, but I would also change to pork instead of chicken.
     
  5. I don't understand why these are called "THAI" ?? I would think some Fish Sauce needs to be added ?

I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking. My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely.
