Thai Crab Salad

ingredients
- 1 1⁄2 cups crabmeat, cleaned and coarsley chopped
- 4 green onions, chopped finely
- 1⁄3 cup cilantro, fresh, chopped
- 2 cups baby lettuce, iceberg or 2 cups romaine lettuce
- 1⁄3 cup cucumber, unpeeled, diced
- salad dressing
- 1 garlic clove, crushed
- 1 inch ginger, peeled and grated
- 2 kaffir lime leaves, torn into peices
- 1 lime, fresh, juiced
- 1 teaspoon fish sauce
- 1 -2 teaspoon brown sugar (optional)
directions
- On a nice platter arrange your lettuce and add the crabmeat, scallions, cucumber and cliantro.
- Mix your ingredients for the salad dressing together and pour over the plated salad.
- Serve immediately, great with fresh fruit and homemade bread.
