ingredients

1 cucumber, cut into ribbons with a peeler
1 gem lettuce, shredded
5 ounces bean sprouts
3 ounces cilantro, roughly chopped
3 ounces mint, roughly chopped
For the dressing
1 teaspoon rice vinegar
¹⁄₂ teaspoon light brown sugar
2 red chili peppers, deseeded and finely chopped

directions

Mix the dressing ingredients together, stirring until the sugar has dissolved.
Place the salad ingredients in a bowl and pour over the dressing, mixing well to combine.
Serve immediately.

This is very fresh tasting. If anything, it could have used a bit more dressing including salt and pepper. It would be best to triple the dressing for the amount of salad ingredients. Made for Asian forum unrated Asian Recipe tag.
