Thai Fish Soup

"From Moosewood. I think this is a really tasty soup, well worth hunting down the dried galanga. If you can find fresh lemon grass (lucky you!), feel free to substitute it for the dried. This would probably be good with some broccoli added, too."

  • Simmer the laos root and lemongrass in 1 cup of the stock for 1/2 hour. Add more liquid as necessary (you want to end up with 1 cup of stock).
  • In a large saucepan, simmer the coconut milk and 2 remaining cups of stock, uncovered, for 5 minutes.
  • Add the chiles, scallions, cilantro, and fish.
  • Strain the lemongrass and laos mixture and add that liquid to the pot (you can toss out the herbs).
  • Simmer, uncovered, until the fish is just cooked. Remove from heat.
  • Stir in the lime juice and the fish sauce, adding more if desired.

  1. This was outstanding. I used around double the amount of fish (Trevalla) but that was only to bulk it up a bit because I was making as a light meal, it wouldn't have affected the overall taste so original quantity would also be fanstastic when used as a starter. Flavour was really well balanced and the last time I had a comparable Thai soup was in a very good Thai restaurant, but even then I think this was just a little better.
     
  2. Great layored flavor and heat from the chilies. Very easy to prepare. The only suggestion would be to add more/different seafood and a little salt (personal taste). Thanks for a great dinner. So, I updated my rating to 5 stars, because the next day the flavor was that much better!

I wandered onto Recipezaar less than a year ago, looking for a lentil soup recipe. I'm pretty sure I haven't left the computer since then...I've been completely sucked in by this site! Of course, I do take the occasional break to actually cook the recipes I find. When I'm not at my computer or in the kitchen, I'm working toward my PhD in clinical psychology from Kent State. I also work as a therapist at the campus clinic, teach a class (Social Psychology this semester), and work as a research assistant. I'm a little bit busy. I do usually find time every day to cook something for myself with the help of this site, and to exercise (to counteract the effects of the great recipes I find here). I don't have much time in my life for hobbies at the moment (sigh), but I seem to recall that I used to like reading, going to see musical performances, and watching movies. I still do my best to travel as much as possible. My sister, Kate, my boyfriend, Jake, and my friend, Kris, are my favorite travel partners. Kate and I go on an "eatacation" every year.
