Thai Iced Tea

"Bring the taste of Thailand to your palate with this classic recipe. Thai tea is a special type of loose tea that is flavored with star anise. The Thai tea strainer consists of a cloth bag about one foot long that is attached to a metal ring. Thai tea strainers are generally available at Thai food markets across the country. (You can also use your own cloth bag)."

  • 2 tablespoons loose Thai tea
  • 34 cup water
  • 2 tablespoons sugar
  • ice cubes or crushed ice
  • 14 cup half-and-half

  • Bring the tea and the water to a boil in a saucepan and simmer over low heat for 3 to 5 minutes, depending on your taste. Strain the tea through a Thai tea strainer into another container and stir the sugar into the tea. Pour the tea over ice in a tall glass immediately, or after the tea has cooled to room temperature. Top with the half-and-half.
  • VARIATIONS: For a really rich drink, substitute heavy cream for the half-and-half and proceed as directed above. You may also omit the cream altogether.
