Thai Salad Dressing

"Fantasic dressing with salad made up of beansprouts, finely sliced red and green bell peppers, sliced scallions, sliced peeled and seeded cucumbers, (any combination you want of crunchy veg) and fresh herbs (try basil, mint or cilantro). Great finished off with some crunchy sesame seeds or cashews!"

  1. Yum! I made this to dress a salad of shredded chicken, cucumber, and bean sprouts. I added a Tbsp. of tahini to make it thicker and creamier. If you use toasted sesame oil a Tbsp. is really overkill, 1/2 tsp. would be ample. Had the chicken salad with brown basmati rice and yello heirloom tomatoes. The tomatoes are weird, I know, but they were going to be beyond use the next day, so....
     
  2. Very nice blend of fresh, zesty flavors! The only thing I changed was to use only 2 Tbsp flax oil and substitute 5 Tbsp coconut milk for the rest; that added extra Thai character! Thanks!
