Thai Salad Rolls

  • Combine all ingredients for the peanut sauce ahead of time, and set aside.
  • In a medium pan, add about 1 1/2 inces of water in, and leave on medium to low head.
  • place the rice papers in the warm water for no longer than 30 seconds, or until tender, but not falling apart.
  • Set on counter or cutting board, and layer noodles, carrot, cuccumber, onions, sprouts and chopped peanuts. Be mindful that you still have to roll it up, so do not overfill.
  • Drizzle peanut sauce over filling before rolling, or use as a dipping sauce.
  • Other dipping sauces used are hiosin, soy, and a chili sauce (sambal Oklek-careful, if you haven't used this before, as it is quite hot).

  1. This review is for the sauce, which is SUPER GOOD! One of the best salad roll sauce recipes I've tried. It has enough ingredients to yield a complex taste but doesn't include anything the average home cook wouldn't have in their kitchen.

  3. This was great and was made even better by easy it was. Even though julienning vegetables is one of my least favorite things to do, as I have no handy gadget yet to help me, I still found that I could put this together much faster than I thought it would. And it transported very well for my lunch when wrapped in moist paper towels and placed in plastic baggie.
     
  4. YES!! This is very, very close to how I have been making these! My kids even love them! I do add a bit of salt and pepper to the veggies as neither child likes to use the dip. Great recipe! Very healthy and fairly easy to make. Oh, I usually drop my carrots and green onions in some water for just a few seconds to soften...but not necessary.

Tweaks

  1. because my house is peanut-free, I subbed Wowbutter PB substitute (which contains a lot of sunflower butter -- the best replacement taste-wise for peanut butter, IMO) and it was still delicious.
