Thanksgiving Carrots

"Here's a new side dish for Thanksgiving. It is very good and pretty. It came from our local newspaper."

  • Wash and sort cranberries; place in large mixing bowl.
  • Add carrots, apple, sugar, salt and cider and stir to blend well.
  • Spray a 2-quart casserole with nonstick spray coating.
  • Spoon vegetable mixture into casserole.
  • Dot vegetables with butter.
  • Bake, covered in preheated oven at 350 for 40 minutes or until carrots are tender.
  • Stir midway through baking.

  1. Everyone loved this recipe for Thanksgiving! I loved the colorful vegetables/cranberry. Just the right amount of ingredient ratio and young and old all liked. Great change from my boring vegetable sides. I'll be using this one all year around, even if I cannot find cranberries! Thanks for posting!

  4. I loved this dish and will be making it often. I will point out, however, that it took a lot longer for my carrots to get tender. Maybe your carrots are smaller than what I can get. The flavor combination is excellent, though. Next time, I think I'll cook the carrots til half done before making the rest of the recipe. Thanks for posting.
     
  5. Delicious! Easy and beautiful, too. I loved the combination of ingredients and was surprised my kids did, too. Served this for Christmas dinner but it's so easy and good, I'd serve with roast chicken, ham, or pork as well as that Thanksgiving turkey. Be sure to use cooking apples like Granny Smith which will hold up to baking without turning to mush. Thanks for sharing the recipe!
