- 2 lbs fresh pollock fillets
- 4 tablespoons mayonnaise
- 1 1⁄2 tablespoons Old Bay Seasoning
- 1 tablespoon vinegar
- 1 lemon, juice of
- 2⁄3 cup seasoned bread crumbs
- 1 teaspoon fresh ground pepper
directions
- Preheat oven to 425°F.
- Lightly coat baking dish with cooking spray.
- Rinse and pat dry fillets.
- Put in baking dish.
- Combine mayonnaise, Old Bay seasonings, pepper, and Vinegar, spread mixture evenly over the top of the fillets.
- Sprinkle with bread crumbs, and lightly drizzle with lemon juice.
- Bake in preheated oven for 25 minutes, or until fish is white and flakey.
- Serve with steamed vegetables and enjoy.

This is very salty, even though I guessed that the salt was a typo, based on previous reviews. I used 1 teaspoon, rather than 1 tablespoon, but even then, my salt loving husband found it too salty. I was also surprised by how spicy it was. I guess I have never used Old Bay in such quantities - I hadn't realized it had such a kick. The first ingredient of Old Bay is also salt, which may account for the too salty flavour.

I made a few adjustments which might have kinda ruined this - I used panko breadcrumbs instead of seasoned, and cooked the whole 2 pounds on one baking sheet. What I ended up with was OKAY flavor, not great, and the topping was large blobs that were kind of gross. Not one I will bother to repeat, although I did make my own Old Bay seasoning using another recipe on Recipezaar, and that part was kind of fun.

This was delicious, and so easy to throw together! I think the hardest part was getting the fish to thaw LOL. I would agree with Ginny Sue that this is pretty salty; I cut it back some based on her review and next time will do so even more. I used lemon pepper instead of black pepper, also. With a salad and Recipe #323772 this was a lovely meal! Thanks so much for posting! This is definitely going in my keeper file.
