  • Scrub potatoes well as skins are delicious. Dry well and stab to vent.
  • Coat clean dry potatoes with olive oil and salt. (I do this in a plastic bag).
  • Place potatoes directly on oven rack and bake at 450F for 1 hour or until done.

Sprinkle with salt and place potato directly on rack in middle of oven. Quite confusing; if the two racks are in top/bottom thirds of oven, then how do we place potatoes in 'middle' of oven??....Is she suggesting using a third (middle) rack?

  1. I love this method (crispy skin). The only difference is I insert a skewer through the potato(s) to ensure quick easy cooking.

  3. These were great! I meant to put potatoes in the crockpot this morning before running errands, and forgot, so I searched for a replacement recipe and found this one. Great potatoes! My oven took about 1 hour and 15 minutes, and I put a cookie sheet under them to catch the oil. The skins were nice and crispy. Thanks for sharing!

  5. I used to bake potatoes wrapped in foil in the oven until I saw something similiar to this on one of Alton Brown's show. I love the crispiness of the skins baked this way. We had them for lunch today and they reminded me of restaurant potatoes, like Red Lobster's which I love. I did prick the potatoes with the fork tines and used sea salt. Also if you'll put a pan underneath the potatoes you wont have to worry about oil dripping on the stove bottom. Great Taters! Thanks for sharing this recipe.
