ingredients
- 1 cup pumpkin
- 1 cup whole wheat flour
- 2 teaspoons cinnamon
- 2 teaspoons baking powder
- 3 egg whites
- 1 cup skim milk
- 2 tablespoons Splenda granular
directions
- Mix the dry ingredients.
- Mix the wet ingredients separately.
- Combine wet and dry ingredients until just mixed.
- Spoon in 1/4 cupfuls onto a hot frying pan coated with cooking spray, flip, and enjoy!

I gave this recipe 3 stars. I made this recipe for Fall 2009 PAC. This recipe got mixed reviews in my house. While my 5 yrs ago newphew and I liked these pancakes, my 6 yrs newphew and my future hubby didn't like these (my future hubby only likes plain pancakes). I made one minor change to the recipe I added whole eggs. My only complaints were I thought these needed more Splenda and I didn't care for the fact that the batter was so thick that they wouldn't spread and I had to spread it myself. Overall I will make these pancakes again for sure! Thanks for posting a really good recipe. Christine (internetnut)
